How To Cure Your Santino Pizza Oven
This video series discusses how to cure your Santino pizza oven step-by-step. The curing process is a 4-day journey of slowly releasing any moisture in your oven so that you can start cooking amazing pizza and other wood fired food. To successfully cure your pizza oven you will need DRY wood, double split if possible. Double split logs are about the thickness of your forearm. White Oak and Almond wood work best. You will need approximately 30 of these logs to fully cure your oven over the 4 day period. You will also want lots of dry kindling of different sizes, as well as an organic fire starter or brown paper bags to start the fire.

Yes. Both the Santino 60 and 70 can be equipped with the Avanzinni Drago P1 burner, there are both propane and natural gas options. All of ovens (excluding DIY kits) have a circular cutout in the oven floor that can be removed to add in a burner.
