Is there a gas option for the Santino oven?
Yes. Both the Santino 60 and 70 can be equipped with the Avanzinni Drago P1 burner, there are both propane and natural gas options. All of ovens (excluding DIY kits) have a circular cutout in the oven floor that can be removed to add in a burner.
How thick is the refractory stone?
Our refractory dome is 2.5” thick, allowing you to store heat inside for longer periods of time, and giving you more of a range when cooking with retained heat at lower temperatures.
Do I cook pizza with the door on or off?
You cook with the door off. Your brick oven is designed to be highly efficient at retaining heat. When you have an active fire, leaving the door on will restrict the fire's oxygen supply, which will cause the fire to go out.
